Lion's Mane Snickerbar Bites

  • 1/4 cup of brown puffed rice
  • 5 medjool dates
  • 1/4 cup of maple syrup
  • 1/3 cup of almond butter .

Cashew filling:

  • 2 cups of cashews
  • 1/3 cup of maple syrup
  • 1/3 cup of almond milk .
  • Chocolate outside:
  • 1 bar of dark chocolate


Add all of the base ingredients into a food processor and pulse until they have combined to form a sticky dough. Empty the contents into a 9x5 tin lined with parchment paper (the lining is used so it can be easily removed from the tin) press to flatten the contents. Place in the freezer to harden for 30 minutes.

In a blender place all the ingredients for the cashew filling and blend until creamy! Pour contents onto the base and place back into the freezer for another 45 minutes until the cashew filling has set!

Once again, in a blender add the maple syrup, almond butter and dates and blend into a caramel paste! Then mix in the puffed brown rice! Pour the caramel onto the cashew layer and place back into the freezer!

Melt the chocolate in a saucepan over medium heat and once melted pour onto the top and place back into the freezer until it sets! Approx 40 minutes!

Slice up and enjoy!
