Pink Pitaya Tropical Smoothie: Dragonfruit, Pineapple and Coconut Milk

Who’d have thought that you could create such a beautiful and delicious smoothie with just four ingredients? It may look an unnatural shade of pink, but it only contains fresh fruits, coconut milk and pink pitaya powder which makes it dairy-free and guilt-free too.

Pink pitaya, also known as pink dragonfruit, is a tropical fruit which was originally native to Mexico and Central America, but now grows in parts of Southeast Asia. It can be tricky to get hold of the fresh fruit in Europe and North America, so pink pitaya powder provides a convenient way to add a tropical taste and a splash of colour to your smoothies, juices and kitchen creations.

Pink pitaya is full of antioxidants, omega-3 and omega-6 fatty acids, Vitamin A and C, a whole host of B-Vitamins as well as essential minerals. These health compounds have been shown to support the immune system, aid digestion, and even reduce the signs of ageing.

Ingredients

  • 1 banana
  • 3/4 cup of pineapple chunks
  • 1 1/2 cups of coconut milk
  • 1 heaped teaspoon of pink pitaya powder

Directions

Place the coconut milk, pineapple chunks and banana into your blender, then add the pink pitaya powder. Whizz it up until smooth. Add extra coconut milk to achieve your desired consistency. Enjoy immediately.
